This wine is a clear reflection of the balance and complement between the Touriga Nacional and the Syrah grape varieties. When tasted it presents ripe black fruit with vegetable, floral and spicy notes. The aging in oak barrel and in bottle has provided a profile of fine structure with polished but present tannins.
Food pairing
Red meats: grilled entrecôte, lamb chops, flank steak with pepper sauce. Medium-flavored game: braised partridge, baked wild rabbit. Traditional Portuguese dishes: oven-roasted kid goat, feijoada à transmontana (if the wine's structure is robust). Aged cheeses: cured Serra cheese, firmer Azeitão. Here, you're looking for intensity and texture that match the depth of the wine. A full menu proposal - Starter: Veal carpaccio with Parmesan shavings and arugula. (The freshness of the raw meat and the saltiness of the Parmesan balance the tannins of the young but full-bodied red. Main course: Oven-roasted goat with potatoes and rosemary. (The intensity of the meat and the toasted flavor of the roast are echoed in the complexity of the wine.) Dessert / Cheese: Board of cured cheeses (Serra cured, Azeitão firm, São Jorge 12 months). (The intense cheeses contrast with the structure of the wine and prolong the aftertaste.)
