Biele portské z Doura, ktoré má v pivnici od začiatku chladno: hrozno sa odstopkuje, mušt sa schladí a stočí a fermentuje pri riadenej teplote 12 až 14 °C. Kvasenie sa potom zastaví vínnym destilátom, čím vínu ostane zvyškový cukor.
