Popis
Tawny z Doura začína krátkym pobytom na šupkách: hrozno sa po príchode do pivnice odstopkuje a mušt potom tri až štyri dni fermentuje na šupkách, pričom ho vinári pravidelne prečerpávajú, aby naberal viac farby a arómy. Kvasenie sa zastaví vínnym destilátom, čím vínu ostane zvyškový cukor.
Zrenie v malých sudoch
Víno potom leží v malých drevených sudoch. Odtiaľ má vanilkový tón, ktorý sa vo vôni prelína so zaváraným ovocím, a odtiaľ je aj svetlá farba, akú mladé červené portské nemá. V závere chuti sa čas v dreve pripomenie ešte raz.
