Tawny portské z Doura vzniká z hrozna, ktoré tri až štyri dni fermentuje na šupkách. Mušt sa počas nich pravidelne prečerpáva, aby z nich nabral farbu a arómy.
Kvasenie zastaví destilát
Potom sa šupky od muštu oddelia a pridá sa vínny destilát so 77 % alkoholu. Kvasenie sa tým zastaví a vínu ostane vlastný cukor z hrozna, takže je v pohári sladké aj pri vysokom obsahu alkoholu.
