Chardonnay je tu jedinou odrodou, presne ako to názov Blanc de Blancs sľubuje. Hrozno sa lisuje vcelku a jemne a do vína ide len najlepšia časť muštu, ktorý pri lisovaní vytečie prvý.
Druhé kvasenie vo fľaši
Bublinky vznikajú druhým kvasením priamo vo fľaši, rovnakou klasickou metódou, akou vzniká šampanské. Víno potom leží v pivnici na jemných kaloch, teda na kvasinkách, ktoré po kvasení zostanú vo fľaši, a práve odtiaľ má tóny hrianky a pražených mandlí. Prvé kvasenie prebehne v nereze pri riadenej teplote, aby sa citrusová sviežosť nestratila.

The aroma proves to be very elegant, where notes of green citrus are enveloped by the complexity of the aging in the “sur lies” cellar, reminiscent of toasted bread and almonds.

Messias
Messias is based at Mealhada, a small city in central Portugal, in the heart of Bairrada region. The company was founded in 1926 by Mr. Messias Baptista, and the management is still held by the descendants of the Messias family.
Since its foundation this wine house has been producing and selling high quality wines from the main demarcated regions: Bairrada, Douro, Dão, Vinho Verde, Beiras and Vinho do Porto. Messias has a lot of first-class port wines on offer. The first Colheita dates from 1947, the first Vintage from 1960. The company is also known for the high quality of its Champagne method sparkling wines and aged brandies.
