Intense but less mature cheeses (young Stilton, buttery Serra cheese, Saint Agur), black fruit desserts (blackberry or cherry crumble, blueberry tart, cherry clafoutis), creamy dark chocolate (ganaches, dark chocolate mousse with wild berries), well-marked grilled meats (aged steak or grilled chop that works well with wine's firm tannins that cut through the fat), spicy chorizo or smoked meats — highlight the spicy and vibrant side of the wine.
