Red meats & game: roast lamb with rosemary and garlic; Beef Wellington or grilled ribeye steak; venison stew or wild boar ragù. Hearty dishes: mushroom risotto with truffle oil; pasta with rich meat sauces, such as ragù or ossobuco. Aged Manchego, Pecorino or Portuguese Queijo da Serra. Desserts: dark chocolate with spices or orange zest.
