Biele portské s označením Dry: pri portskom znamená suché niečo iné než pri tichom víne. Toto má 60 gramov cukru na liter, čo je v rámci portského málo, ale sladkosť z pohára nezmizne, len ju vyvažuje výrazná kyselina.
Fermentácia bez šupiek
Hrozno sa úplne odstopkuje a mušt ide do nerezovej nádrže bez kontaktu so šupkami. Fermentuje pomaly a chladno, do 22 °C, s prirodzenými kvasinkami, teda s tými, ktoré prišli do pivnice priamo na hrozne.
Tri roky v nereze
Zreje tri roky v nerezových nádržiach, takže v pohári nehľadajte drevo, ale čisté ovocie. Pred fľašovaním sa víno jemne filtruje, na dne fľaše preto nenájdete usadeninu a dekantovať ho netreba.
