Po destilácii gin dozrieva dvanásť mesiacov v dubových sudoch, v ktorých predtým ležalo portské. Drevo je vyzreté, takže vínu ani destilátu už nepridáva vlastnú chuť, a práve odtiaľ má gin jantárovú farbu.
